A satisfying and delicious mealtime won’t be complete without this yummy dish that is loaded with lots of meat, cheese, and mashed potatoes. Guaranteed, you’ll have a full tummy after eating this shepherd’s pie that you can also share with your family. What makes this even better is that you can make this recipe by Cooking With Claudia on YouTube using leftover ingredients, too!
Step 1
Place a skillet pan on a stove over medium heat, then add the beef, and break it apart. Allow it to cook until it’s no longer pink, then remove it from the pan, and set it aside for later. Using the same pan, add some olive oil, then add the chopped onion, red bell pepper, and carrots, and season them with salt and black pepper. Mix them all together and cook them over medium heat for about 4 minutes or until slightly softened and flavorful, then add the minced garlic, and let them cook for 30 more seconds or until start to become fragrant.

Step 2
Put the cooked beef back into the pan, then add the Worcestershire sauce, tomato paste, and beef base, and then give them a good mix until combined. Allow them to cook for about 1 more minute until all flavors start coming together, then add the peas, dried thyme, dried basil, dried rosemary, and dried parsley, and continue to mix until well combined. Taste and adjust the flavor by adding more salt and pepper as needed, then turn off the heat and remove the pan from the stove.
Step 3
Using a spatula, level out and flatten the surface, then spread the cheddar cheese all over the top, and add the mashed potatoes as well spreading it evenly until the top is well coated. Sprinkle more cheese on top, then place it in the preheated oven at 400°F, and allow it to bake for about 20 minutes or until nice and bubbly. Broil it for 2 more minutes until the top is nice and golden, then let it sit for a few minutes to cool down, and then garnish it with chives if you want. Serve and enjoy!
