Do you love Good Humor’s strawberry shortcake? You can now make it at home with this easy copycat recipe by Philip Lemoine on Youtube. I have to admit this tastes absolutely better! It’s so good–I finished half of it.
Note: let the ice cream sit in your refrigerator while you make the crust
Place 24 pieces of golden Oreos in a food processor. Blend until it becomes fine crumbs.
Run the food processor again and slowly add 4 tablespoons of melted butter.
Add parchment paper to a 9×9 square baking. Make sure to leave the leave allowances on the long side so you can easily pull them out later.
Add sand to your pan and evenly spread it out along the bottom. Using a glass with a flat bottom, press the cookie sand to make the crust. Place it in the freezer for about 30 minutes to set.
Add 2 pints of vanilla ice cream to the crust and spread it evenly using a spatula. Place in the freezer again for another 30 minutes.
Add the strawberry ice cream and spread it evenly to the pan. Place in the freezer while you make the toppings.
Break the remaining golden Oreos into pieces and place them in your food processor. Pulse until it becomes big crumbs. You can sift out the finer cookie crumbs from the bigger ones if you prefer.
Place freeze-dried strawberries in a zip-lock bag and turn them into scrubs.
Top the ice cream with cookie and strawberry crumbs. Place it back in the freezer for about 30 minutes or overnight.
Remove from the pan and slice into bars. Serve and enjoy!
