Prepare a delicious dish for lunch or dinner in just 30 minutes with this one-pan creamy tuna pasta by Spain on a Fork. If you are in a rush and looking for a quick meal, go for this recipe. Place a large frying pan over medium heat and add 2 tablespoons of extra virgin olive oil.
Once the oil is hot, add thinly sliced shallots and roughly chopped garlic. Saute for about 2 minutes. Next, add 1/2 teaspoon of sweet smoked paprika and quickly mix. After that, add diced tomatoes, then season with sea salt and black pepper. Mix until well combined then turn the heat to high and let it simmer for about 3 minutes.
Add 2 cups of vegetable broth and mix. Bring it to a boil, then add 2 cups of uncooked penne pasta. Mix and cook for about 9 minutes. Cover it with a lid and turn the heat to low-medium heat. Turn off the heat after 3 to 4 minutes then remove the lid.
Drain two cans of tuna into a sieve with a bowl underneath – mix the tuna to remove excess oil.
Once the pasta has slightly cooled, add the drained tuna, 1/2 cup of Greek yogurt, 2 tablespoons of finely chopped parsley, and black pepper. Mix until well mixed.
Sprinkle finely chopped parsley on top and serve. Enjoy!
