Cut the sweet chocolate into pieces. Place a small saucepan and add the cream – heat at 176 Fahrenheit. Once hot, add the chopped chocolates and stir until melted.
Add the cream cheese and mascarpone cheese to a bowl and mix until well combined using a silicone spatula.
In a different bowl, add 2 eggs and 2.5 tablespoons of sugar. Whisk until well combined.
Add a small amount of the egg-sugar mixture to the cheese, then mix until it becomes smooth. Pour the remaining mixture into 2 more batches, mixing after every addition.
Mix the chocolate cream then add to the cream cheese mixture. Stir until it becomes light brown and smooth.
Get a piece of parchment paper and crumple it. Take the bottom of the springform pan and cover it with the crumpled parchment paper to make a crease and get the circle form. Remove it then place the bottom back in the pan, followed by the parchment paper. Cut excess.
Pour the mixture into the pan. Shake and thump it a little bit to remove air bubbles.
Place in the preheated oven and bake at 446 Fahrenheit for about 23 to 28 minutes.
Once done baking, let it cool for a little while then place in the refrigerator overnight.
Remove from the pan and take off the parchment paper. Slice, serve, and enjoy!
