Ingredients:
- 1 large carrot, peeled and chopped
- 1 cup old-fashioned rolled oats
- 1 cup pitted Medjool dates
- 1/2 cup pecans
- 1 cup unsweetened shredded coconut, divided
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/8 tsp ground nutmeg

Step 1
Toss the peeled and chopped carrots into a food processor. Pop the lid on and grind them finely. After this, go ahead and add the rest of the ingredients: 1 cup of old-fashioned rolled oats, 1 cup of pitted Medjool dates, 1/2 cup of pecans, 1/2 cup unsweetened shredded coconut, 1 tsp vanilla extract, 1/2 tsp ground cinnamon, 1/4 tsp ground ginger, and 1/8 tsp ground nutmeg. Put the lid on again and process all the ingredients until they are well combined and start to form a paste.
