This healthy cobb seafood salmon salad by Natashas Kitchen is incredible! Not only is it delicious, but it’s also nutritious. It’s filled with protein and fiber that are good for you. Ingredients:

For pan-seared salmon:

  • 1 lb of salmon (boneless and skinless)
  • 1 teaspoon of sea salt
  • 1/4 teaspoon of black pepper

For healthy cobb seafood salad:

  • 1 large head of romaine lettuce (chopped)
  • 2 ears of corn (cooked, shucked, and cut off the cob)
  • 1/2 medium red onion (thinly sliced)
  • 2 large eggs (boiled, peeled, and quartered)
  • 1 large avocado (peeled, pitted, and sliced)
  • 1 1/2 cups of cherry tomatoes (halved)

Ingredients for the cilantro lime dressing:

  • 3 tablespoons of fresh lime juice
  • 3 tablespoons of virgin olive oil
  • 2 tablespoons of fresh cilantro (chopped)
  • 2 tablespoons of fresh dill (chopped)
  • 1 garlic clove (pressed and finely minced)
  • 1 teaspoon of sea salt
  • 1/2 teaspoon of black pepper

Instructions:

Step 1:

Generously season salmon with salt and black pepper.

Step 2:

Add 1 tablespoon of oil to a large non-stick skillet over medium-high heat. Once hot, add the salmon, top-side down. Cook until it’s golden and crisp for about 4 minutes, then flip and cook the other side for another 4 minutes or until cooked through. Once done, transfer it to a plate and let it cool to room temperature. Flake the salmon with forks into bite-sized pieces.

Step 3:

Arrange the romaine lettuce on your serving bowl or plate.

Step 4:

Arrange the prepared corn kernels, eggs, onion, avocado, and cherry tomatoes in rows over the romaine lettuce.

Step 5:

In a measuring cup, combine dressing ingredients. Drizzle evenly over the salad before serving. Enjoy it while it’s freshly made!
