This warm and scrumptious recipe is sure to bring you comfort and leave you with a satisfied tummy. This is super easy to prepare and can be cooked all in one pot, plus, you can also share this with the whole family, and serve it on the side of your favorite dish for a hearty and loaded meal.
Step 1
Place a pan on a stove over medium-high heat, then slice the tortilla into strips, and deep fry them in the hot oil in batches to not overcrowd the pan. Cook the tortilla strips until golden brown, then scoop them out using a spider, and set them aside on a place lined with a paper towel to drain off all the excess oil. Once done cooking the tortilla strips, remove the pan from the stove, then place a pot over medium heat, and drizzle some oil. Once the oil is heated up, add the chopped onions, jalapeno, and minced garlic, then give them a good stir to combine, and allow them to cook for a few minutes before adding the chicken breasts.

Step 2
Season them with salt, pepper, and garlic powder, then add the corn, black beans, cilantro, lime juice, crushed tomato, and beef broth, add the cumin and chili powder as well, and stir them all together until well combined and incorporated. Bring the mixture to a light simmer, then cover the pot with the lid, and allow the chicken to cook for about 25 minutes. After 25 minutes, remove the chicken breast from the pot, then lower the heat, and shred the chicken before putting it back into the pot. Stir them all together and cover the pot with the lid, then allow it to simmer for 8 more minutes, and serve. Enjoy!
