Peel and cut the potatoes into strips about 0.4 to 0.6 inches thick. Once done, put them in a bowl and pour water until they are covered. Let them soak for about 30 minutes. This helps to get all of the extra starch out of the potatoes. Strain the potatoes and wash them a few times again with water.
Pour some water into a pot and add a little bit of salt. Place over heat and add the potatoes. Let it come to a boil. Once boiling, cook for 5 minutes more. Strain the potatoes and spread them on a tray lined with a paper towel. Pat them dry to speed up the process.
Once the potatoes are dry, place them in a bowl and add the cornstarch. Shake the bowl to coat the potatoes.
Place a pot over medium-high heat and pour a generous amount of oil. Once the oil is hot, add the coated potato strips. Cook for 5 to 8 minutes until the potatoes are fully cooked and the outside layer is scrunched up a bit. Take them out from the oil and spread them evenly on a tray so they cool down easier.
Make the cheese dip. Add unsalted butter to a pan. Once boiling, add the flour and mix until well incorporated. Next, add 1/4 teaspoon of salt and 1/4 teaspoon of chili powder. Mix immediately and pour the unsweetened milk. Season it with pepper then add the cheddar cheese and sugar. Mix until melted. Let it boil on low heat until it turns into a thick consistency.
Heat the oil again and put the potatoes back. Fry for about 4 to 6 minutes and give it a stir once in a while until the potatoes turn golden. Strain and place on a plate.
Serve the fries with the cheese sauce. Enjoy while freshly cooked!
