I don’t know about you, but I love eating marble cakes. It’s one of my favorite go-to snacks or desserts whenever I’m craving sweets. It’s light and soft – perfect with a cup of coffee or tea. Last weekend, I tried to make it at home using this grandma’s marble cake recipe by Fatto in Casa da Alba on Youtube. It turned out to be one of the fluffiest and most delicious cakes I have ever tasted. The chocolate with the subtle hint of lemon and orange zest was fantastic. Add 4 eggs, 0.3 oz of vanilla sugar, and 3/4 cup of sugar to a bowl. Whisk using a hand mixer until it becomes foamy and smooth.
While continuously mixing, add 2/3 cup of yogurt and 2/3 cup of oil. Next, add 2 cups of flour and 2 1/4 teaspoons of baking powder to the mixture. Whisk again until well combined. Take a little portion of the mixture, transfer it to a different bowl, and set it aside.
Add lemon zest to the mixture and stir. Pour it into a greased baking pan.
Take the reserved mixture and add 2 tablespoons of cocoa. Mix until it becomes brown and smooth, then add orange zest.
Drizzle the cocoa mixture on top of the cake mixture. Using a stick, swirl the chocolate to create the marble effect, then sprinkle chocolate chips on top.
Place inside the oven and bake for 35 minutes at 356 degrees Fahrenheit.
