Step 1
Preheat your oven to 350 degrees, then grease two 9-inch round cake pans with butter, and dust them with flour or cocoa powder tapping out the excess. Prepare the cake batter in a large mixing bowl or a stand mixer, simply add the flour, sugar, cocoa, baking soda, baking powder, and salt, then give them a good stir until well combined, add the eggs, buttermilk, warm water, oil, and vanilla, and beat them together over medium speed until smooth. Divide the batter into the two prepared pans evenly, then let them bake in the preheated oven for about 30 to 35 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool on a wire rack for about 15 minutes, then unmold them, and continue to let them cool on the wire rack completely.

Step 2
Now, prepare the pecan filling. Place a medium-sized saucepan on a stove over medium heat, then melt the butter, and add the sugar. Whisk them together and cook until well combined and the sugar has browned or caramelized. Add the egg yolks, evaporated milk, and vanilla extract, then let them cook over medium heat for about 12 to 14 minutes or until it has thickened while stirring occasionally. Remove the saucepan from heat, then stir in the coconut flakes and pecans, and let it cool completely while stirring occasionally until it has a spreadable consistency.

Now, the frosting or chocolate buttercream is completely optional, but if you want to make it as well, simply beat the butter in a mixing bowl until fluffy, then add the cocoa powder and vanilla extract, and continue to beat them together until combined. Add the powdered sugar one cup at a time and beat to combine in between each addition, then transfer the mixture into two piping bags, and set aside. You can now assemble the cake. Spread half of the coconut pecan filling in between two cake layers, then spread the frosting around the outside of the cake, pipe and decorate the top, and spread the leftover coconut pecan filling at the center. Slice, serve, and enjoy!
