Ingredients:

  • 8 slices of thick sliced bacon
  • 8 pcs. medium-sized potatoes
  • canola oil
  • kosher salt
  • chopped green onions
  • 1/2 cup of cheddar cheese
  • 1 tbsp butter
  • some ranch dressing

Directions:

Step 1

Preheat the oven to 400 degrees F. Next, line your baking pan with aluminum foil, then put the slices of bacon on it. Place it in the oven for 15 to 20 minutes. Now, rinse off the potatoes really well and line them in a baking tray. Brush some canola oil on all the potatoes. After the bacon is done, swap it with the potatoes in the oven and bake them for 60 minutes. Transfer the bacon to a paper towel-lined pan to get off the grease and make it crispier. Next, after an hour, get the potatoes out of the oven. Slice them half, get all the potato flesh, and put them in a bowl. (Make sure to slice slowly so the skin won’t tear off.)

Step 2

After this, start working with the potatoes in the bowl. Get your masher and mash it a bit, then add 1 tbsp of butter. Continue mashing til the butter is well incorporated. Next, add kosher salt and fresh ground black pepper to taste followed by a bit of ranch dressing all together to combine the ingredients. Back to the potato skins, brush some canola oil on the insides, then sprinkle some kosher salt all over them. Do the same process on the other side of the potato skins, then stick it back to the oven at 400 degrees F for 7 minutes. After 7 minutes, get them out of the oven, flip them to the other side, then put them back in the oven for another 7 minutes. Next, it’s time to assemble the potato skins. First, put some shredded cheddar cheese on the bottom followed by chopped bacon. Stick it back to the oven for the last time just so the cheese melts. After this, when the cheese melts, get it out of the oven and sprinkle some green onions on top.
