Step 1
In a large mixing bowl, add the sugar, lemon zest, and salt, then whisk them together until well combined. Rub the sugar and zest together with your fingers until the consistency feels like wet sand. Next, add the melted butter, eggs, lemon juice, and vanilla, then whisk them all together until fully combined. Get a separate mixing bowl, then whisk together the flour and baking soda to combine, and fold it into the sugar mixture until uniform and incorporated. Cover the bowl, then refrigerate for at least 4 to 12 hours.

Step 2
Once the dough is ready, preheat the oven to 350°F, then line 2 cookie sheets with parchment paper, and set them aside. Add the confectioners’ sugar to a small bowl, then dust your hands with some of it, and start rolling a 1½ heaping tablespoon or a scoop of the chilled cookie dough until smooth. Coat each dough in the confectioners’ sugar, then place them on the lined baking sheet about 1½ inches apart. Bake them in the preheated oven for about 12 to 14 minutes or until the top cracks and the bottom edges are starting to brown. Let it cool in the pan for about 2 minutes before transferring them to a wire rack to cool completely. Repeat this process with the rest of the cookie dough, then serve, and enjoy!
