In a bowl with chopped chicken breast, add 2 tbsp light soy sauce and 1 egg white that is slightly whisked. Mix everything well, then leave it for at least 20 minutes. Moving on to the lemon sauce, add 1/2 cup of chicken stock in a bowl followed by 1 & 1/2 tbsp light soy sauce, and 3 tbsp sugar. Mix it. Next, get 1 lemon and zest it. Put the zest in a small bowl followed by 3 tbsp of lemon juice. Back to the chicken, transfer them together with the marinade to a container with 1 cup of flour. Mix it through.

Gently shake off any excess flour from the chicken breast, then drop them into a pan with hot oil. (Make sure that the chicken breasts are fully submerged in the oil.) Fry them for about three minutes, then transfer them to a paper towel-lined plate. Now, get your wok (or pan if you don’t have a wok) nice and hot. Add some oil, 2 cloves of minced garlic, and 1 tsp grated ginger. Mix it all, then add the sauce you made earlier. Stir it, making sure that the sugar is dissolved. Simmer it for a few minutes, then add the lemon juice followed by a mixture of 2 tsp cornstarch dissolved in water. Add the fried chicken breast and stir all of it through. Transfer them to a serving plate and add some lemon slices (optional) and garnish with some chopped spring onions and a sprinkling of sesame seeds.
