We all love one-pan chicken and veggies dishes as they are easy and fast recipes that anyone can make. You can save a lot of time by preparing this ahead of your schedule. This is the Mexican chicken fajitas recipe by Break the Spice on Youtube. To make it more authentic, use ancho chile. It’s perfect for tortillas, burritos, wraps, or rice. Cut the chicken breast against the grain for tender meat. Using parchment paper below the chicken while slicing will prevent cross-contamination. Once done, place in a container.
Make the marinade. In a mortar, put the 3 cloves of garlic and 1 teaspoon of salt. Mash them using a pestle. Then add 5 peppercorns, 1/2 teaspoon of cumin, 1 teaspoon of oregano, and 1 teaspoon of red chili flakes. Crush the ingredients together with the garlic. Next, pour 1/4 cup of lemon juice and grind with the mixture. If you don’t have a mortar and pestle, you can use a blender.

Mix the chicken with the marinade. Set aside until the vegetables are prepped.
Thinly slice all the vegetables (onion and bell peppers) then place them on a plate.
In an iron skillet, pour 1/4 cup of cooking oil. Once the chicken is hot, place the marinated chicken and fry until lightly charred and crisp on both sides. Place them on a plate once they are done.
In the same pan, sautee onion until lightly browned. Next, add peppers and cook until lightly charred. Turn off the heat and add the cooked chicken. Mix them. Serve on a plate as a burrito, wrap, with rice, or as is. Enjoy!
