Remember these old-fashioned oatmeal cookies or also known as iced cookies? This recipe by Sugar Spun Run is so much better than what you have tried before! It’s firm on the outside but chewy on the inside and dipped in a yummy vanilla frosting. Bake this today at home and I’m sure it will be gone in just a few minutes. For the icing:
Preheat the oven to 350 degrees F and line a cookie sheet with parchment paper.
In a bowl, combine melted and cooled butter, dark brown sugar, and granulated sugar. Then add egg yolks and vanilla extract. Stir the ingredients well, then set aside.
In a medium-sized bowl, add flour, baking soda, baking powder, and salt. Whisk all dry ingredients together until well combined.

Put the old-fashioned oats inside the food processor and pulse briefly (7-10 times, don’t overdo it as it will end up with flour). Add the oats into your cookie dough until well incorporated.
Scoop 2-3 teaspoons of cookie dough per cookie and gently roll between your palms to round and smoothen the dough. Place the cookie dough at least 2″ apart on the lined baking sheet and gently press down each cookie using your fingers to light and flatten them.
Place in the preheated oven and bake for 12 minutes. Once done, allow it to cool completely.
In a small bowl, combine powdered sugar, 1 1/2 tablespoons of milk, corn syrup, and vanilla extract. Whisk all ingredients until well-combined. If it is too thick, add more milk. the frosting has the right consistency when you lift up a spoon and it drizzles a thin ribbon of icing back into the bowl. It should hold its shape for just a second before dissolving back into the mixture.
Grip the cookies by the base and dip just the surface of the cookies into the frosting. Pull it straight out and place it on a cooling rack to set. Let it sit for a few hours at room temperature for the icing to set completely.
