Preheat the oven to 375 degrees F.
Using the butter, grease a shallow 2-quart baking dish. Pour olive oil into a medium skillet and place over medium heat. Add the onions and let it cook for 5 minutes or until golden and soft. Season with a pinch of salt.
Layer half of the tomatoes on the bottom of the baking dish and top with half the onions. Season with 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Next, add half the oregano and half the cheddar. Repeat with the remaining tomatoes, onion, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, oregano, and cheddar.
Get a small bowl and combine the breadcrumbs, melted butter, and the remaining 1/2 teaspoon of salt. Sprinkle the mixture on top of the casserole.
Place in the oven and bake for 30 minutes or until the top is golden brown and the tomatoes are tender. Once done, remove from the oven and serve on a plate. Enjoy!
