Ingredients:

  • 500g or 1 pound of okra
  • ½ tsp of turmeric powder
  • 1 tsp of red chili powder
  • 1 tsp of dried mango powder
  • 3 tbsp of flour
  • 1 tbsp of rice flour, optional
  • Salt, to taste
  • Oil, for frying

Directions:

Step 1

Wash the okras clean, then chop off their ends before cutting them into thin strips. Place the thin okra strips in a large mixing bowl, then add the turmeric powder, red chili powder, dried mango powder, flour, and salt to taste (you can substitute and skip other seasonings if you like), and toss them all together until the seasonings are evenly distributed and the okra strips are well coated.

Step 2

Let them rest for about 5 minutes to let the seasonings and flavor stick to the okras, then place a skillet pan on a stove over medium heat, and heat up some oil (enough to deep fry the okras). After 5 minutes and once the oil is hot enough, place the seasoned okra strips in the hot oil in batches so as to not overcrowd the pan, then break them apart so that they’re in a single layer as much as possible, and fry them until crispy and golden brown. Once done cooking, remove them from the pain, then drain off the excess oil, serve, and enjoy!
