Ingredients:

  • 2 cups of all-purpose flour
  • 1 1/2 cup of old-fashioned oats
  • 1/2 cup of granulated sugar
  • 1/4 cup of light brown sugar
  • 1/2 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 18 tablespoons of unsalted butter
  • 1 teaspoon of vanilla extract
  • 10-12 ounces of assorted jams
  • vegetable cooking spray

Instructions:

Step 1:

Preheat the oven to 350 degrees F.

Step 2:

Using the vegetable cooking spray, lightly grease a regular size 12-well muffin pan then set aside.

Step 3:

Put the four, oats, sugar, baking powder, and salt in the food processor. Blend well. Then add the butter and vanilla. Pulse until the mixture becomes a crumbly dough. To combine it well, scrape down the sides of the bowl. Some of it will look dry.

Step 4:

Transfer the dough into a large bowl to stir. The dry crumbs in the bottom will be used for the streusel.

Step 5:

Scoop from the cookie dough, level it, then drop into one of the muffin tin wells. Lightly press the dough into the bottom of the pan making to make sure it is leveled. Do the same process until the pan is full.

Step 6:

Put one full teaspoon of jam into the center of the cookie base in the muffin tin. Then using a small spoon, scatter crumbled dough around the outside edges of the cookie surrounding the jam. Press lightly if needed to hold it together.

Step 7:

Put in the oven and bake for 15 to 18 minutes. Rotate the pan halfway through baking, until the jam bubbles with a lightly browned color on the edges. Make sure to not over-bake. Allow the cookies to cool in the pan for at least 5 minutes. Once it is cooled, transfer it to a wire rack to completely cool. To remove the cookie easily, use a small rubber spatula to tilt the cookie up. If it starts to crumble, let it cool a little longer. Once cooled, store at room temperature in an air-tight container.
