Directions:
Prepare all the needed ingredients.
Preheat the oven to 340F.
In a large mixing bowl, add in 80g of cake flour, 240g of bread flour, 1 egg, 5g of instant yeast, 3g of salt, 50g of sugar, and 150g of ice milk. Mix well so that all the ingredients are evenly incorporated. Mix with a paddle mixer until the mixture resembles dough. Then, add in 30g of unsalted room temperature butter and continue stirring until the butter is incorporated into the dough.
On the counter, sprinkle in some flour and knead the bread dough. Next, wrap the dough. Put the plastic cellophane on and let it cool in the freezer for about 30 minutes.
Slice 120g of unsalted butter into 6 thin slices for the butter. Place the butter slices on some parchment paper and wrap them. With a rolling pin, roll out the butter. Then place in the fridge to cool.
Back with the dough, take the dough out of the plastic cellophane. Sprinkle some flour on the counter and roll out your dough.
Take the butter out of the fridge and place it in the center of the dough. Cover the butter with the side edges of the dough and roll it out. Fold the dough in half and wrap in cellophane. Then, place the dough in the fridge to cool for about 20 minutes.
Following that, back on the counter with flour, roll out the dough, and fold as so. Roll it out again to make it 16 cm x 33 cm wide. Wrap the dough in plastic wrap and place it in the refrigerator for another 20 minutes. After that, slice the dough into long strips. With the long strips, make a chain of swirls.
Grease a pan with a generous amount of baking spray and place it in the pastry dough. Cover the pans with plastic cellophane and place them in a warm place to ferment for about 150 minutes. When done, brush some egg wash on top of the dough.
Carefully place the dough in the oven to bake for 25 minutes at 340F.
Lastly, gently take it out of the oven and brush on some melted butter.
Enjoy!
