Preheat the oven to 350F.
Grease a 5×9 inch loaf pan with butter.
In a mixing bowl, add all the dry ingredients: 1 ¼ cup all-purpose flour, 3/cup all-purpose flour, ¾ cup whole-wheat flour, ½ cup toasted sunflower seeds, ½ cup toasted pumpkin seeds, 2 tablespoon sesame seeds, 2 tablespoon black sesame seeds, 1 teaspoon baking powder, ½ teaspoon baking soda, ½ teaspoon salt.
Mix well with a spoon to combine and set aside.
In a separate bowl, add all the wet ingredients: 1 ¼ cup buttermilk, 1 large egg, ¼ cup oil, ¼ cup honey. Using a hand whisk, whisk everything together until everything is well combined. Pour the wet mixture into the previously prepared flour and seed mixture. Whisk everything until well combined, but don’t over mix to avoid hard bread.
Pour the batter into the 5×9 loaf pan and spread evenly.
Sprinkle the topping seeds evenly on top of the batter: ½ tablespoon black sesame seeds, ½ tablespoon sesame seeds, 1 tablespoon toasted sunflower seeds, and 1 tablespoon toasted pumpkin seeds.
Place the batter in the oven at 350F and let it bake for 45 minutes, or until golden brown and fully cooked.
