Every year we get a huge crop of tomatoes from my garden in Fredricksburg, right in the heart of the Texas Hill Country. These Hill Country tomatoes are so delicious and I have always struggled with not being able to eat all my tomatoes before they go bad. I have always wanted to learn to can tomato salad, so when I found this fabulous canned tomatoes video recipe tutorial by Whipporwill Holler, on YouTube, I wanted to try it with my next batch of fresh Hill Country tomatoes and cucumbers. The method of making these canned peaches was really easy to follow and I only needed a few canning supplies that I found at Walmart. I got a canning bath that came with a basket insert, a wide-mouth funnel, and some jar tongs. The mason jars can be found at Dollar Tree, Michael’s craft store, Hobby Lobby, or Walmart also.

Ingredients For The Canned Summer Salad Recipe:

  • 4 to 5 medium cucumbers
  • 1 onion (thinly sliced)
  • Bell peppers (sliced)
  • Thyme, Oregano, & Dill
  • 1 cup of water
  • 1/2 cup of white vinegar
  • 1/4 cup of oil
  • 1/4 cup of sugar
  • 1 teaspoon of salt
  • 1/2 teaspoon of pepper

Then, you will add the onions, cucumbers, and tomatoes. Then just can a place in the fridge, I suppose you could use a water bath here but you should definitely check first.
