Cajun chicken has been a favorite of mine for a long time, but I’ve never seen it made so easily. Smokin’ & Grillin’ wit AB really nailed it with this one-pot cajun chicken recipe. I served it with some penne pasta noodles and it was absolutely delicious! My family all wanted seconds.

Place. your chicken breasts into a bowl. Trim the chicken to get some of the fat off of it, then butterfly slice the chicken to slim it out so it will cook through evenly. Do this with all the chicken.

In a different bowl, combine salt, pepper and flour. Coat the chicken in the mixture, then place the chicken into your baking pan. You don’t need to coat it too thoroughly, just a light coating of flour.
Put olive oil into your pan once it has heated, then add some butter to the pan. Place your chicken in and allow it to brown on both sides. Once both sides are brown, set the chicken aside on a plate.
Mince your fresh garlic, and add it to the hot pan. Then, add the sun-dried tomatoes to the pan and reduce the pan heat to medium before adding in your chicken broth.
Turn the pan hear back up, add the chicken broth and heavy whipping cream. Let it simmer for about 30 seconds, and then add in the cajun seasoning.

Add the chicken back into the pan and let it cook. That’s all. This recipe is super easy to make and taste delicious.
