Tammy with Collard Valley Cooks has shared the most amazing old-fashioned coconut cake recipe. I made it this past weekend for my family reunion, and it was the fist desert to leave the table, everyone just loved it!
For the measurements of each ingredient, check out the description box of Collard Valley Cooks YouTube video down below.
In your mixer put in your shortening and butter. Mix that all together.
Add in your sugar to the shortening and butter. Once it is mixed, add in your egg whites while still mixing. The mixture should not be creamy and frothy.
Pout in baking soda, baking powder and salt. Get it mixed in good, then add in your buttermilk and flour while alternating and still mixing. Also pour in your vanilla flavor during this step.

Scrape the sides of the mixer and continue mixing the cake batter for a few more minutes.
This is a layered cake, so you will pour the batter into 4 pans. Using more shortening, grease the pans all over, then sprinkle in a little bit of flour and allow it to go around the edges as well. Fill your pans with batter and then tap the bottom of the pans to remove the air bubbles.

Bake then in the oven at 325 degrees until the edges are a golden brown. Once the cake is cool flip them out of the pans to cool for a little longer.
Mix your icing. In a bowl, pour a can of cream of coconut and whisk it up until it gets frothy. Pout 3/4 cups of the mixture into another bowl
Combine the coconut cream left with your fresh coconut, then use 3/4 a cup of luke warm water to soften up the coconut. Mix this up. If the consistency is too hard, add in a bit of coconut milk. This is what you will sprinkle on top of the icing.
Next, combine the cream of coconut in the new bowl with a half stick of butter and mix. Add in your powdered sugar as the cream and butter mix. This will be your icing
Stack the layers and ice the cake, then cover the outside with your coconut crumbles. You can pile some crumbles between the layers as well.
