For this recipe, you’ll need lemons, eggs, white granulated sugar, unsalted butter, and vanilla extract. The preparation and cooking time is only about 11 minutes. The steps are super simple, so even beginners with no cooking experience will still get perfect results. Serve it with french toast, waffles, bread, pancakes, or crepes, or use it to make lemon bars, muffins, cookies, or cakes.
In a bowl, 2 whole eggs, 4 egg yolks, and 1 cup of white granulated sugar. Whisk well for about 3 to 4 minutes. Alternatively, you can use a hand mixer or stand mixer.
In a small stainless steel pot, add the egg and sugar mixture and freshly squeezed lemon juice. Give it a quick mix, then turn the heat to medium. Mix the lemon curd with a rubber spatula as it cooks. Scrape along the bottom of the pan to make sure nothing is stuck on the bottom. It will take about 3-5 minutes until it thickens nicely.
Once your lemon curd, take it off of the heat and add 1/2 cup of butter and 1 teaspoon of vanilla extract. Whisk well.
Transfer into a glass mixing bowl and cover it with cling wrap right into the surface of the lemon curd so that a thin film doesn’t form on the outside. Let it cool completely.
Once it is completely cooled, transfer it to a sealed glass jar for storing in the refrigerator for up to 2 weeks.
