For this recipe, you’ll need lemons, eggs, white granulated sugar, unsalted butter, and vanilla extract. The preparation and cooking time is only about 11 minutes.   • 2/3 cup of freshly squeezed lemon juice
  • 2 whole eggs
  • 4 egg yolks
  • 1 cup of white granulated sugar
  • 1/2 cup of unsalted butter
  • 1 teaspoon of vanilla extract

How to Make Lemon Curd

Step 1:

In a bowl, 2 whole eggs, 4 egg yolks, and 1 cup of white granulated sugar. Whisk well for about 3 to 4 minutes. Alternatively, you can use a hand mixer or stand mixer.

Step 2:

In a small stainless steel pot, add the egg and sugar mixture and freshly squeezed lemon juice. Give it a quick mix, then turn the heat to medium. Mix the lemon curd with a rubber spatula as it cooks. Scrape along the bottom of the pan to make sure nothing is stuck on the bottom. It will take about 3-5 minutes until it thickens nicely.

Step 3:

Once your lemon curd, take it off of the heat and add 1/2 cup of butter and 1 teaspoon of vanilla extract. Whisk well.

Transfer into a glass mixing bowl and cover it with cling wrap right into the surface of the lemon curd so that a thin film doesn’t form on the outside. Let it cool completely.

Step 5:

Once it is completely cooled, transfer it to a sealed glass jar for storing in the refrigerator for up to 2 weeks.
