Combine ground oats, softened coconut oil, and honey in a bowl. Mix all ingredients until the dough comes together using a fork.
Spread the oat mixture on a lined 8 by 8 inch baking pan. Press the corners with your fingers.
Place in the oven and bake at 350 degrees F for 10 minutes. Once done, let it cool until you make the lemon filling.
In a different mixing bowl, beat 5 large eggs, then add 1/2 cup of honey, 1/2 cup of lemon juice, 1 tablespoon of lemon zest, and 1/3 cup of ground oats. Mix until well combined.
Pour the egg mixture onto the oatmeal crust and thump to remove voids. Place in the oven and bake at 350 degrees for about 20 to 25 minutes or until set but still soft when touched gently.
Once done, let it cool for 1 hour at room temperature, then place the baking pan inside the fridge for about 3 to 4 hours. Slice in 9 equal squares, then dust with powdered sweetener if desired.
