Crack 4 eggs in a mixing bowl and add 1/4 teaspoon of salt. Beat the egg using chopsticks as this will allow you to handle them in a more gentle way and not overbeat them.
Chop 3 green onions and place them in a bowl. Wash the tomatoes and remove the leaves. Cut them into 1/2″ wide wedges and set them aside.
Heat a wok over high heat and add 1 tablespoon of cooking oil. Once it’s smoking hot, pour the beaten egg and scramble the egg to cook evenly but do not do it too much as you want to keep them together. Remove the egg from the wok while it’s still loose and not thoroughly cooked.
Lower the heat to medium and another tablespoon of cooking oil then put half of the green onions. Cook until it becomes a little bit brown and it gives an aroma. Add the tomatoes, 2 teaspoons of soy sauce, and 1/4 teaspoon of salt. Stir fry everything together. Then add 1 teaspoon of ketchup. Let it simmer.
Once it simmers, add the egg and break it into the tomato oil. Once done, turn off the heat and toss the remaining green onions. Transfer to a plate and drizzle some sesame oil.
