To make this dessert recipe, you need whipping cream, powdered icing sugar, vanilla extract, and chocolate wafer cookies. If you can’t find any wafer cookies, you can try the biscuits you have in your local store. The consistency of the cake may vary depending on the cookies you use. As it chills in the refrigerator, the cookies will absorb some of the moisture, which will make a cake-like texture.

In a medium bowl or bowl of your stand mixer, add cream, sugar, and vanilla. Whip on high speed until stiff peaks. Make a taste test and adjust sweetness if needed.
Figure out what shape and size you want to make your cake. It could be in a rectangular pan or serving plate. Take one cookie and spread a bit of whipped cream on it, then place another cookie to make a sandwich. Be sure to add enough whipped cream between cookies.
Repeat making sandwiches until you’ve used 11 cookies for your first row. Place the first row on your serving plate. This is one short end of the rectangle.
Repeat step 3 to make 3 more rows with 11 cookies each to form long rectangle forms.
Once you have a rectangle, cover it with the remaining whipped cream. Transfer the whipped cream into a piping bag or plastic bag with the corner cut. Pipe it in a single layer all over the cake. Smoothen it out with a spatula.
Crush the remaining cookies and use them to decorate the cake. Place in the refrigerator for at least 6 hours so the cookies will soften. Slice, serve, and enjoy!
