Ingredients:

  • 3.5 oz of shrimp (peeled weight)
  • 1 cup and 5 1/4 tablespoons of tapioca starch
  • 1/3 cup of water
  • 1 level teaspoon of salt

Instructions:

Step 1:

Remove the heads, peel off the skin, and devein the shrimps.

Step 2:

Place them in a bowl. Pour a one-third cup of water and one level teaspoon of salt. Using an immersion blender, mix everything until it becomes a paste.

Step 3:

Add the tapioca starch to the shrimp paste and mix until well combined using a silicone spatula. Once it forms into crumbs, use your hands to knead it until it becomes like dough.

Step 4:

Transfer it to your workspace and roll it until it becomes long. Cut it in half.

Step 5:

Get one of the halves and beat it with your hand to flatten it a bit. Cut it into 3 equal sizes. Do the same for the other half.

Step 6:

Boil water in a pot. Once boiling, add the pieces of dough. Stir it gently to avoid them from sticking to the bottom. Cook for about 10 minutes until cooked through.

Step 7:

Once cooked, drain and place on a rack. Let them dry at room temperature for about 5 hours.

Step 8:

After 5 hours, cut them as thin as you can, then place them in a cooling rack. Let them dry overnight. If you are not going to fry them right away, just put them on a ziplock and place them in your refrigerator.

Step 9:

Add a generous amount of oil to a pot. Once the oil reaches 356F, add the thinly sliced shrimp and cook until they become crispy. Take out the fried shrimp right away so that they won’t burn.
