If you love potatoes, give Life is an Opera‘s 3-ingredient potato gratin a try! It’s incredibly easy to make, making it the perfect dish for busy days. It will probably only take you less than 10 minutes to prepare, and it’s ready to go in the oven for baking.

To make this simple version of potato gratin, you will need small potatoes, feta cheese, and eggs. Simply peel and cut the potatoes into thin slices, then place them in your casserole dish. Mix crumbled feta cheese and eggs, then pour over the sliced potatoes. Bake in the oven until golden brown on top, and it’s ready to serve. It has a very rich flavor that pairs perfectly with beef tenderloin, salad, roasted chicken, pan-seared salmon, or short ribs.
Peel the potatoes and cut them into thin slices. You can also par-boil the potatoes before slicing to remove some of the starch to get a lighter and fluffier texture.
Get a casserole dish and fill the bottom with thinly sliced potatoes. Overlapping each one.
Get a bowl and crumble the feta cheese into smaller pieces.
In a different bowl, crack 3 eggs and beat well.
Pour the beaten egg over the crumbled feta cheese. Mix until well combined.
Add the feta cheese egg mixture over the thinly sliced potatoes. Spread evenly making sure all the potatoes are covered.
Place inside the oven and bake at 392F for 30 to 35 minutes until golden brown on top.
Once done baking, remove the casserole dish from the oven and let it cool for a few minutes. Garnish with herbs on top if preferred, then serve while warm. Enjoy!
