Sometimes you want pancakes, but do not have pancake mix. In this case, that’s okay. With only 3 ingredients, you can make delicious pancakes using one bowl. Most of the time I would have these 3 ingredients in my pantry, but sometimes not almond flour. I think regular flour could work with this recipe, but either way, it takes only 3 ingredients to make this. You can top off these bouncy pancakes with berries, maple syrup, or anything. This pancake recipe serves 1-2 people, so just increase the number of ingredients for more pancakes. I need to try this pancake recipe because I want to see how it would taste using only these 3 ingredients. Of course, any recipe that has 5 ingredients and under would catch my eye because I want to make less of a mess as possible.
First, get your cast iron or non-stick skillet ready on medium-low heat. Then, in a bowl, mash the banana. Add the almond flour and mix until smooth paste forms. Mix in the eggs one by one, then add the pinch of salt.
Next, add butter or oil to the pan and pour your pancake mix. Cook for 2-4 minutes per side until browned on both sides.
I love how bananas can substitute for a lot of ingredients, and they come in handy. I made muffins using bananas, honey, and chocolate chips which were phenomenal. It’s easy to have ripe bananas lying around the counter, so why not have better use out of them? This is a great healthy alternative for pancakes if you don’t have the premade pancake mix already in your pantry.
