Put 1 cup of roasted peanuts in a food processor and crush them into fine crumbs. Place the crumbs in a bowl and reserve about 2 tablespoons for decoration later.
Crush the remaining roasted peanuts in the food processor until it becomes spread. Combine with the fine crumbs.
Add a pinch of salt (optional), a pinch of cinnamon (optional), and 1 tablespoon of cocoa powder (optional) to the mixture. Gradually add 2 to 3 tablespoons of honey, then mix after every addition until well combined using your hands.
Form the mixture into balls in the size you want and place them on a plate. Place in the refrigerator and let them chill for about 10 minutes.
While the cholate balls are in the refrigerator, crush the sugar-free dark chocolate into small pieces and place them in a heatproof bowl. Melt the chocolates by placing the bowl on top of a pot with boiling water or you can put it in the microwave.
Dip all of the chocolate balls into the melted chocolate, then place them on a baking tray lined with parchment paper. Sprinkle with some of the saved peanuts earlier.
Place the chocolates inside the refrigerator and let them chill for about 10 minutes. After 10 minutes, you can place the chocolate balls in small paper molds. Serve and enjoy!
