These 3 easy egg bites recipes by You Suck At Cooking are the perfect snacks to have for breakfast, and they are way better than Starbucks’. You can make them ahead and just grab one whenever you want a bite. They are super easy to prepare and ready in a couple of minutes.

Ingredients

  • eggs
  • salt and pepper to taste
  • cooking spray

Filling 1

  • broccoli
  • cheese

Filling 2 

  • dried tomatoes
  • chives
  • feta cheese

Filling 3

  • ham
  • green onion
  • asiago cheese

Instructions

Step 1:

Add eggs in a bowl and season with salt and pepper. Beat well with a fork, then set it aside.

Step 2:

Prepare the filling

Filling 1:

Get the broccoli and cut parallel to the top to make very small bits. Make sure not to add the hard part. Fill a pot with water and place it over heat. Let it come to a boil. Transfer broccoli pieces in s strainer and place it over the pot. Make sure it’s not touching the water. Cover it with the lid and cook for 5 minutes. Grate the cheese.

Filling 2:

Slice the dried tomatoes and chives into small pieces, then crumble the feta cheese.

Filling 3:

Cut the ham and green onion into small pieces. Grate the cheese.

Step 3:

Add your choice of filling to the beaten egg (for filling 1 – don’t add the cheese yet). Mix until well combined.

Step 4:

Spray a 6-cup muffin tray with cooking spray and pour the cups about 3/4 full. Don’t fill them too much as they are going to expand when baked.

For the broccoli muffins, sprinkle the grated cheese on top.

Step 5:

Place inside the oven and bake for about 13 to 18 minutes at 350F. If they are still jiggly, bake them for a little longer.

Step 6:

Serve with mayonnaise on top. Enjoy!
