Ingredients:

  • 4 salmon fillets
  • 1 tbsp oil
  • 1 tbsp butter
  • 1 shallot, finely diced
  • 1 garlic clove, minced
  • 1/2 cup white wine
  • 1 lb fresh fettuccine pasta
  • 1 cup heavy cream
  • 2 cups arugula
  • 1/2 lemon, zest and juice
  • 1 tbsp chopped fresh parsley
  • salt and pepper to taste

Directions:

Step 1

Season your salmon with salt and pepper to taste. Next, heat 1 tbsp oil in a skillet over medium-high heat. Once the oil is hot, add the salmon, season side down. Cook them until golden brown, then flip the salmon and continue to cook for an additional three to four minutes. Once cooked, remove the salmon from the pan and set aside. Next, melt some butter in the same skillet. As soon as the butter melted, add the chopped shallot and the minced garlic. Cook them for 30 seconds to a minute. After this, add 1/2 cup of white wine and let it simmer for about five minutes.

Step 2

While the wine is simmering, cook the pasta according to the package instructions. Once the white wine is completely reduced, stir in 1 cup of heavy cream and 2 cups of arugula. Cook them for about a minute or two. Season them with some salt and pepper, and add the zest and juice of half a lemon. Once everything is heated through, stir in the cooked pasta. Mix until the pasta is well coated with the sauce. Transfer to a serving plate with flaked salmon and fresh parsley on top.
