In just 15 minutes, you can make this delicious carbonara recipe by Brian Lagerstrom. I never knew I could make my favorite dish this fast. It was so easy to prepare and didn’t even need a lot of ingredients. I highly recommend you try this at home.

Fill a pot with water and place over heat. Bring it to a boil, then add salt and spaghetti. Let it simmer on high heat for about 8 minutes. Once done, noodles should have a bit of crunch in the middle. Reserve some pasta water for later.
Place a large heavy-bottomed pot over low heat. Once hot, add a bit of olive oil, then add the bacon. Allow them to render and brown for about 8 minutes while stirring occasionally.
Get a bowl and add the different kinds of cheese and eggs. Whisk until well combined.
Once the bacon is golden and rendered, transfer them to a plate and turn the heat to medium-low. Add any bacon grease back to the pot, followed by black pepper. Fry it and stir with a wooden spoon. Make sure to scrape the brown bits.
Ladle 1 and 1/2 cups of pasta water into the bacon pot and continue to deglaze the bottom of the pot. Transfer the spaghetti to the pot.
Add 1/2 cup of pasta water to the egg and cheese mixture and stir it well.
Add 1/2 cup of additional pasta water into the pot and stir. Let the pasta simmer in shallow water for about 90 seconds. The pasta should now be al dente. Remove it from the heat and add the rendered bacon. Next, add the egg-cheese mixture and mix until melted. If the heat is not enough to melt the cheese, return the pot to low heat and stir it constantly until melted.
Sprinkle parmesan on top and black pepper. Serve and enjoy!
