Ingredients:

  • 1/2 cabbage, shredded
  • 1 zucchini, chopped into bite-size
  • 3 medium carrots, shredded
  • 2 tomatoes, sliced
  • 1 lemon, juiced
  • 1 bunch of parsley, chopped

For the dressing:

  • 1/3 cup of olive oil
  • 2 tbsp of cider vinegar
  • 1 orange, juiced
  • 1/4 tsp of ground black pepper
  • a pinch of salt

Directions:

Step 1

To start, shred half a cabbage, transfer to a large bowl, then drizzle the juice of half a lemon. Season with a bit of salt, mix, and leave to macerate. Next, chop the zucchini into bite-size pieces as well as the tomatoes and the parsley, then shred the carrots.

Step 2

Now, drain the water from the cabbage and start assembling the salad. Transfer the cabbage to a large bowl, then add the shredded carrots and the chopped tomatoes, zucchini, and parsley.
