If you’re feeling something sweet, but too lazy to bake a whole cake, try this carrot mug cake that takes only 1-minute to make. This tutorial by Em’s Kitchen provides a healthier version using oats that I find perfect for those that are trying to cut back on calories. I love how this video is short and to the point with no fancy ingredients. Also, this is super convenient for college students that do not have an oven and only a microwave in their dorm. I need to keep this recipe on my list for days that I do not feel like baking. This is a great recipe for those that do not know how to bake and want something more simplified. It only takes a dump of ingredients in a mug, mixing and microwaving.

Ingredients:

For cake:

  • 4 tbsp all-purpose flour
  • 2 tbsp sugar
  • 1/8 tsp baking soda
  • 1/4 tsp cinnamon
  • Pinch of nutmeg
  • Pinch of salt
  • 2 tbsp milk
  • 1 tbsp oil
  • 2 tbsp grated carrot
  • Chopped raisins (optional)
  • Chopped walnuts (optional)

For the frosting (optional):

  • 1 tbsp cream cheese
  • 1 tsp honey
  • 1/4 tsp vanilla

Directions:

First, pour all of the dry ingredients in a mug and stir. Add the wet ingredients and optional raisins and walnuts. Mix everything together and microwave for 1 minute.

Next, in a bowl, add cream cheese, honey, and vanilla extract and mix together to make the frosting. This is an optional step, but I think it completes the carrot cake mug with this icing on top.

In conclusion, I think it’s amazing how Em’s Kitchen made a tutorial that only takes 1-minute and requires only a microwave to make. It’s so easy and there’s no big mess to clean up after. I’ve seen cake mug packets sold in stores, but it’s so much cheaper. Plus, this recipe requires fresh ingredients.
