This zucchini broccoli casserole recipe by Hearty and tasty has always been a family favorite. It is loaded with different vegetables, cheese, and eggs. The flavors are refreshing and delicious, especially with the sauce. Nothing will be left on the table when you serve this dish – everyone will fight for the last piece because it’s so yummy. Add 4 eggs, 6 and 1/4 tablespoons of heavy cream, and salt in a mixing bowl. Whisk until well combined.
Grate the parmesan into the egg mixture. Put the feta cheese in a bowl and mash using a fork. Add it to the mixture and stir.
Drizzle some olive oil into a pan and add the diced onion. Saute for 1 minute. Next, add the diced carrots. Fry for 2 minutes, then add the diced zucchini. Fry for another 2 minutes. Lastly, add the broccoli and cook for 4 minutes. Season with salt and pepper, then mix.
Turn off the heat and add the cherry tomatoes. Pour the egg and cheese mixture into the pan. Mix until well incorporated.
Place the pan inside the oven and bake for 30 minutes at 374F.
Make the sauce. In a small bowl, combine 2 tablespoons of mayonnaise, 2 tablespoons of greek yogurt, 2 cloves of pressed garlic, and chopped dill.
After 30 minutes, remove the pan from the oven and put the casserole on a serving plate. Slice and serve with the sauce. Enjoy!
