For garnish (optional):
Add 2 cups of whipping cream to a mixing bowl. Beat on high until you get stiff peaks. You don’t want it to be too stiff. Give it a mix after a few mixes.
Add 1 teaspoon of vanilla extract and mix well.
Spread some of the freshly whipped cream onto a plate. Take a piece of the wafer, then spread 1 1/2 teaspoon of whipped cream. Top it with another wafer, making a sandwich. Add another 1 1/2″ teaspoon of whipped cream and top with another wafer. Place it on the end of the whipped cream on the plate.
Repeat step 3 until you build an entire roll.
Frost the entire roll with the whipped cream. Once done, place in the refrigerator for at least 4 hours.
Sprinkle with chocolate sprinkles and top with raspberries.
