It is savory with the right kick of spiciness which makes the dish even more delicious than it already is. You may think that this is too much work for you, but not if you follow the right technique as shown in the video tutorial, and besides, all the effort will be worth it.

Ingredients:

  • ½ green pepper, diced
  • ½ red pepper, diced
  • ½ white onion, diced
  • 2 stalks of celery, diced
  • 2-3 tsp minced garlic
  • ¼-½ cup apple cider vinegar
  • 3-4 tbsp butter
  • Ground black pepper, to taste
  • Salt, to taste
  • Crushed red peppers
  • Hot sauce

Directions:

Step 1

Boil the hog maws in a large pot filled with water for about 25 to 30 minutes, then remove it from heat and let it cool off. After cooling off, start removing the slimy clear fat from the chitterlings by pulling it off starting from the tip of the chitterlings. Remove the brown and yellow stuff that’s on the chitterlings as well. Once they are all clean, slice them into small thin pieces, then chop up the green pepper, red pepper, white onion, and celery into small pieces.

Step 2

Place a large pot on a stove, then put the sliced hog maws and chitterlings, and add the chopped vegetables, minced garlic, apple cider vinegar, butter, and black pepper. Fill the pot with water leaving about 2 inches of headspace from the rim. Place the lid of the pot leaving a small crack on the side. Let it cook over high heat for about 3½ to 4 hours or until the hog maws and chitterlings are tender. Season them with crushed peppers, hot sauce, and salt to taste.
