Whipped shortbread cookies are one of my family’s favorite treats for holiday parties ever, it’s almost always a must to serve this in every gathering that we have. They are very easy to make and could also look very festive with a little design here and there using different sprinkles. This cheap and easy recipe is made by one of the best YouTubers I know Sugar Spun Run, she just makes everything looks so effortless yet delicious. So get your tools ready and let’s get baking!

Ingredients:

  • 1 cup Unsalted butter, softened
  • ¾ cup Powdered sugar
  • 1 tsp Vanilla extract
  • ¾ tsp Salt
  • 2 cups All-purpose flour
  • 2 tbsp Cornstarch
  • Nonpareils, jimmies, or colored sanding sugar (optional)

Directions:

Step 1

Combine the butter and powdered sugar using a stand mixer or an electric hand mixer until the mixture’s color is lightened and the texture fluffy and creamy. Do this for at least 5 minutes or longer if you’re using a hand mixer. Add the vanilla extract and salt, then stir it until it’s fully combined. Get a separate bowl then whisk the flour and cornstarch together. Turn the mixer speed to a medium-low setting while gradually adding the flour, mix it until well-combined.

Step 2

Scoop the dough in tablespoon sizes then roll between your palms and smoothen. Place it on a baking sheet lined with parchment paper, space the cookie doughs about 1 to 2 inches apart from each other. Flatten the cookie dough slightly using a fork, you can sprinkle nonpareils, jimmies, or sugar if you want. Bake it in a preheated 325°F oven for about 12 minutes. Allow it to cool completely before removing it from the baking sheet.
