Creamy Sauce:
To start, make the sauce. Combine 1/2 cup mayo, 2 tbsp ketchup, 1 tsp Dijon mustard, 1 tbsp Worcestershire sauce, 1 tsp lemon juice, 2 tsp ground pepper, 1 tsp onion powder, 1 tsp garlic powder, 1 tsp sweet paprika, and 1 tbsp sweet radish in a small bowl. Mix well and set aside. Next, heat a pan over low heat and melt 2 tbsp butter with a bit of olive oil. Once melted, add the sliced onions, 1 tsp red wine vinegar, and 1 tsp Worcestershire sauce. Cook for 15 to 20 minutes until softened and charred. Set aside once done. In the same pan, cook the bacon until nice and crispy.
Now, spread some butter on one side of the bread, melt some butter on the griddle, and then add the bread. Grill them until nice and toasty on both sides. Set them aside once done. After this, prep the patties. Take about a third of a cup of the ground beef, flatten them, and then place them on a plate or board. Back to the griddle, once heated up, drop the patties and sprinkle some salt and ground pepper over. Cook them until both sides are nicely browned (season the other side of the patties as well with salt and ground pepper).
Now, start building the patty melt. Add one slice of toasted bread on the griddle, spread some sauce over, add two slices of cheese followed by two patties, some onions, two slices of cheese again, some bacon strips, then spread some sauce on another slice of bread and place it on top. Cook it until the cheese melts. Once done, cut it diagonally and transfer to a serving plate. Repeat these to make more.
