I used to only make watermelon shakes with leftover watermelon slices until I learned about this recipe. The pudding is soft, sweet, and delicious, with a tropical flavor from the coconut. It only requires a couple of ingredients and it’s super easy to make. Go ahead and give this dessert recipe a try.
Start by cutting the watermelon flesh into pieces. Remove the seeds and blend into juice. You need 2 cups.
Transfer the juice into a pan then add 1/3 cup of sugar. Mix until well combined. Add 2 to 3 drops of red food color. Place over heat and let it come to a boil.
In a bowl, add 1/4 cup of corn flour and 1/4 cup of water.
Once the mixture is boiling, add the corn flour mixture. Mix well. Cook the mixture until it thickens. Once thickened, let it cool for 5 minutes.
Pour the mixture into food grade plastic cups. Let them cool to room temperature, then place in the fridge for an hour.
Remove them from the cups by placing them upside down. Cut into round slices, then coat with desiccated coconut. Top with mint leaves and serve.
