I am so excited that the rest of the world finally discovered veggie noodles! I’ve been making my own for about 4 years, and was I ever pleasantly surprised to see 1) veggie noodles show up in my grocery store 2) all of my favorite food bloggers have started creating veggie noodle recipes. Until last year, though, I only knew how to make about 5 things with my veggie noodles. I must admit that the menu was getting quite dull. Voila, in my Pinterest feed suddenly appear…choices.
