I always love making my own pastries at home, and one of my absolute favorites is this vanilla muffin recipe from Easy Baking on YouTube. Since I’ve discovered this delicious muffin treat, it has never left my weekly pastry goodies rotation. It’s also quick and easy to make, making it the perfect treat to pull off whenever hosting unexpected guests.

And did I mention you will only need seven easy ingredients for this recipe? That’s right! I bet you already have the ingredients in your kitchen. They are so moist and fluffy that I promise you’ll never think of buying vanilla muffins outside once you try this recipe. Watch the video below to learn the step by step instructions.

Ingredients:

  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 cup milk
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 3 cups flour
  • 1 tsp baking powder
  • 1/2 tsp salt

Directions:

Step 1

Preheat your oven to 350 degrees F and line your muffin tin with cupcake liners. Set it aside. Next, crack two eggs in a medium mixing bowl and whisk until fluffy and foamy using an electric mixer (for about three minutes). After this, add 1/2 cup vegetable oil and 1 cup milk and mix until combined. Next, stir in 1 cup sugar and 1 tsp vanilla extract, then sift 3 cups flour, 1 tsp baking powder, and 1/2 tsp salt. Fold it in gently, then whisk just until combined.

Step 2

Once done and the mixture is smooth, grab an ice cream scooper and divide the cupcake batter evenly between the muffin cups. After this, place it in the preheated 350 degrees F oven and bake for 20 to 25 minutes, or until the toothpick comes out clean. Serve and enjoy!
