Step 1
In a large mixing bowl, break the unsalted butter and whisk it around before adding in the sugar, whisk them together until well combined. Beat the eggs in a small bowl, then add gradually onto the mixture, whisk together until uniform. Divide the dough into 150 grams (2/3 cup) portions, then set one portion aside. Take the other portion, then sift the cake flour, ground almonds, and baking powder over it. Fold and mix them until well combined. Step 2
Scoop the dough mixture onto the cannelé mold or pound mold and alternate between 25 grams (2 tablespoons) of cocoa dough and 25 grams (2 tablespoons) of plain dough. Bake it in a preheated oven at 170°C (338°F) for about 20-25 minutes. Once done baking, tap it lightly on the surface, then flip to unmold onto a cooling rack. Trim the bottom to flatten it, then set it aside. Prepare the glaze by simply mixing the powder sugar and hot water in a bowl, mix with a spatula until smooth, add water as needed. Dip the top of the pound cake in the glaze, then garnish with chopped pistachio, let it set then serve.
