Ingredients:

  • 2 cups of grated cauliflower
  • 1 cup of freshly grated parmesan cheese
  • 1 egg beaten
  • pizza sauce
  • pizza toppings

Instructions:

Step 1:

In a pan over medium heat, put the 2 cups of grated cauliflower and stir to remove the moisture. You do not want to overcook or cook them until brown, you just want to dry them. Once dry, remove from the heat and set aside. Let it cool down.

Step 2:

Crack one egg in a bowl. Beat using a fork then add 1 cup of freshly grated parmesan cheese. Mix them together. Once the cauliflower is cooled, add them to the bowl. Using a whisk, combine all ingredients.

Step 3:

Put some parchment paper on top of the pizza pan. Take the cauliflower mixture and transfer it into the pan. Press it out into a thin pizza crust shape about 1/4 inch thick. It will hold together well and not take too long to cook. You don’t want the edges of the crust to be thin as they will darken up and appear burnt. You want to keep the thickness of the crust to be uniform.

Step 4:

Place in a preheated oven at 400 degrees F for about 15 to 20 minutes until the crust has firmed up.

Step 5:

Once done, remove the cauliflower pizza crust from the oven and spread your favorite pizza sauce on top. You can use marinara sauce, pesto, white sauce, or any sauce you like. For this pizza, the pizza sauce is made from tomato sauce, dried oregano, dried basil, dried thyme, garlic powder or fresh garlic, salt, and pepper. Next, top it with basil, spinach, mushroom, cherry tomatoes, and more cheese. You can put your favorite pizza toppings.

Step 6:

Place it again back in the oven and continue to cook at 400 F for about 10 minutes until the toppings are cooked. Keep an eye on the edges of the cauliflower crust as it will darken too much if overcooked. Once done, remove it from the oven and set it on a cooling rack or you can just serve it immediately.
