I think the chopped ham and potatoes adds a nice texture with all of the ingredients that are mixed into one. This is a good recipe for post holiday dinner meals.

Ingredients:

  • 3 cups chopped ham
  • 14 Little potatoes from The Little Potato Company, baked, chopped (3/4 lb or 340g)
  • 2 cups leftover mashed potatoes (3/4 lb or 340g)
  • 1 1/2 cups shredded cheddar cheese divided
  • 2 green onions sliced
  • 3/4 cup light sour cream
  • 3/4 cup heavy cream
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Directions:

First, preheat the oven to 375F. Lightly grease a 2.5-3 quart or a 9×13″ baking dish. Add ham, chopped potatoes, mashed potatoes, 3/4 cup of cheddar cheese, onions, sour cream, heavy cream, salt, pepper, and garlic powder to the baking dish.

Next, stir everything together, and sprinkle with the remaining 3/4 cup cheese and bake for 30 minutes or until bubbly at the edges. Let sit for 5 minutes before serving.

Overall, I love how this recipe is made with leftover food. This can be a good recipe to have when it’s the holidays because I know I make mashed potatoes and ham during Thanksgiving and Christmas. Also, you can be flexible with this recipe because you can use mashed potatoes, cubed potatoes, or even cubed hashbrowns. Casseroles are so easy to make because you can mix a lot of ingredients together and top it off with cheese and be done.
