Ingredients

  • 30 oz white beans (drained and rinsed)
  • 30 oz fire-roasted diced tomatoes (don’t drain, you need two 15-oz cans)
  • 2 cups of sliced carrots
  • 1 1/2 cups of diced celery
  • 1 small white onion (diced)
  • 1 garlic clove (minced)
  • 2 bay leaves
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • 1 teaspoon of salt
  • 1/4 teaspoon of pepper
  • 32 oz of box chicken broth
  • 1 1/2 lbs of boneless skinless chicken breasts

Instructions

Step 1:

Add the drained white beans, fire-roasted diced tomatoes(undrained), sliced carrots, diced celery, diced white onion, minced garlic, bay leaves, and chicken breasts to the slow cooker.

Step 2:

Season it with dried oregano, dried thyme, dried rosemary, salt, and ground black pepper.

Step 3:

Pour the chicken broth then place the lid. Set the slow cooker on low setting and let it cook for about 8 hours.

Step 4:

After 8 hours, get the bay leaves and discard them. Get two forks and shred the chicken right in the slow cooker. You can also remove it from the slow cooker, place it on a plate, shred it, then put it back. Mix everything together until well combined.

Step 5:

Scoop in individual bowls and serve with parmesan cheese on top. Enjoy this soup while warm with your family and friends.
