This Tuscan chicken white bean soup by The Magical Slow Cooker is the perfect meal for the colder days! It’s comforting, warm, and super easy to prepare. Add the drained white beans, fire-roasted diced tomatoes(undrained), sliced carrots, diced celery, diced white onion, minced garlic, bay leaves, and chicken breasts to the slow cooker.
Season it with dried oregano, dried thyme, dried rosemary, salt, and ground black pepper.
Pour the chicken broth then place the lid. Set the slow cooker on low setting and let it cook for about 8 hours.
After 8 hours, get the bay leaves and discard them. Get two forks and shred the chicken right in the slow cooker. You can also remove it from the slow cooker, place it on a plate, shred it, then put it back. Mix everything together until well combined.
Scoop in individual bowls and serve with parmesan cheese on top. Enjoy this soup while warm with your family and friends.
