Ingredients:

  • 2 & 1/2 lb beef chuck, cut into chunks
  • 2 tsp kosher salt
  • 3 tbsp olive oil
  • 8 cloves of garlic, smashed
  • 1 bottle (750ml) Chianti (or Sangiovese, super Tuscan, etc.)
  • 1 & 1/2 tbsp coarse black pepper

Directions:

Step 1

First, dry off the beef with paper towels well. After this, season both sides with 2 tbsp of kosher salt. Next, put 2 tbsp of olive oil in a pot and put a few pieces of beef in it (you don’t want to overcrowd your pan.) Sear both sides of the meat for four to five minutes. You can put the garlic at this point to get the oil permeated with the garlic. You can just pull it out after a couple of minutes so that you don’t burn your garlic while you sear the meat. After all the meat is done, lower the heat, then put all the pepper into the same pot, add a tiny bit more oil, and let it permeate for about 30 seconds. After this, add one bottle of chianti to the pot. Now, you can turn up the heat to about medium-high or high, then scrape off all the brown bits on the bottom and let it come to a boil for a couple of minutes.

Step 2

After it boils, lower the heat to medium-low, then put the meat back into the pot as well as the garlic. Put on the lid and cook it for about one hour and a half or two hours. After one and a half hours, take off the lid and cook for another sixty to ninety minutes to let the liquid reduce.
